Spanakopita ~ Greek Spinach Pie

I was introduced to Greek food back in 5-6 years ago, there was this quite decent Greek restaurant, called Mykonos. One of my very favorite has always been spanakopita ~other than moussaka :)

Spanakopita adalah pai bayam dengan campuran keju feta, dill, parsley dan daun bawang.

Pas di Yunani, musim panas tahun lalu, langsung cobain spanakopita yang dijual di fournos (bakery). Fournos sendiri arti harafiahnya oven. Tapi ini jadi sebutan untuk bakery di Yunani.


Now, gladly I can share the recipe here ^_^ If you google it, there will be pages of spanakopita recipes. Be careful, coz some of them, even real greek people might have not ever heard it before hahaha.. Karena banyak banget additional ingredient-nya yang aneh2. So, I'll stick with mine, the original Greek spanakopita recipe! Trust me, this is a non-failure recipe!


2,5 lb fresh spinach
5 green onion
11 0z feta cheese
2 eggs
2 tsp fresh parsley
1 tsp fresh dill
10 filo pastry sheets
olive oil

- Chop the onions, dill, parsley. Throw out their stems. Put in a bowl.
- Boil a water in a pot, put the spinach. Blanch the leaves until just wilted.
- Drain the water and let the spinach cool off.
- Mix with bowl of onion, dill and parsley.
- Crumble and add feta cheese.
- Salt if desired (for me no salt added, feta is already salty and tasty enough)
- Put olive oil on baking pan and on every layer of filo sheets.
- Fold over the hanging sheets and brush the top of layer.
- Bake on 375 F or 180C for 45-60 minutes or until the top layer has a nice golden brown color.

Other variation: fold in a triangle shape :)
